Right With Apple-Lite: Weezie's Gourmet Recipe's
APPLE MERINGUE
(serves 6)
6 apples, any type, sliced, skin intact
1/2 cup apple juice, orange juice or pineapple (sugar-free)
4 egg whites beaten till stiff
A dash of nutmeg
Wash and slice apples, thin. Place in saucepan with juice over medium
heat. Cook for 5-8 minutes or until apples are softened. Place in
baking dish, 8 inches. Sprinkle with nutmeg. Place meringue over top.
Bake in 400 degree oven till meringue is golden brown. Any fruit may
be used for this dessert. ENJOY!
POACHED SALMON
(4 servings)
1 pound fresh salmon
2 cups water
Juice of 2 lemons, squeezed
2 tbsp. lemon zest
1/2 cup fresh parsley
Freshly grated black pepper
Remove skin from fish. Cut into serving pieces. Place water in large
frying pan. Add lemon juice, zest and parsley. Heat water to boiling.
Gently lower fish into water. Turn heat to low. Cook until fish flakes
(3-5 minutes). Remove fish from water. Sprinkle with fresh parsley
and grated pepper. ENJOY!
